I don't have time to play both right now, both sound very similar, just curious what has the better experience/story and how linear/sandbox each are.

Bones tries to be more story focus. Which is both a negative and positive.
And Pendor is more like your typical M&B sandbox mod.

It really depends on what your looking for.
Pendor is feature complete and classed as finished, while Bones is playable the dev dropped it after bannerlord came out.
