Healing happens over time, and yes, it is very slow if you do not help it along. How to do so?
- there is a party skill "First aid". It reduces the damage you have taken, right after the battle's over
- there is a party skill "Wound treatment". It increases the healing rate, a lot.
- you heal faster when resting in towns and castles. At night, you pay unless you own the fief.
Some mods have additional ways of healing, for example, the Viking Conquest DLC has physicians, who, among other services, can always bring you up to 40% health.
Frankly, I prefer to make up my own stories, and have only finished two of the three "With Fire and Sword" main quests. "Viking Conquest"'s story is good, but still it is only a cherry on top of the excellent sandbox.
In any case, I recommend finishing Native a few times before you try any of the mods/DLCs with stories, because they tend to be brutally harder than Native. I mean that. Even some veteran players are reduced to complaining and rage quitting.
With the wound feature turned off though, physicians are next to useless. If you're far enough from a major town to camp for one night, you'll likely heal enough that they can't help any way.
