AI troop amount per party depends on the economy. If they only own one village, they wont have much troops. So the bigger the faction of the enemy, then they have more troops. (More fiefs, more troops per lord)
my maximum renown was around 4000 in native and biggest ive had is in Prophesy of Pendor around 5050 if i remember right, in a save that had been played for around 100 hours.
You can gain renown fast if you know how to beat huge parties.
In practice, I have never come close to that. I have had 4800 renown in Gekokujo, in a run in which I never used anything but companions, and would sometimes fight 15 vs 1200. I'm slowly inching towards 5000 renown in Viking Conquest, but every time I actually I go on a campaign, I lose renown, because I earn nothing when I beat 500 with 300 men. I can still earn renown only by beating 40+ elite vikings with 8 companions, or in sieges when I attack 900+ with 300 men.
There are mods like Prophecy of Pendor, where you have improvements that generate renown for you at high rates. There you have gotten around 6000, but that's it.
AI max army size is very much mod dependent, but usually it depends on the number of fiefs a lord owns personally, as well as well as his renown, whether he is a marshal, etc... Mods like PoP also assign personal bonuses and a minimum retinue. The rate of replenishment depends on the faction's economical strength - i.e. besieged cities and looted villages cause AI armies to replenish much slower.
Something that causes lords to vastly exceed their army size is their rescuing prisoners from their enemies, or even outlaws. When this happens, AI lords can end up with over a thousand troops, and will gradually lose them. Until they do, you may have a very hard time dealing with them. But in general, a good player should be able to handle 1 on 5 ratios easily, especially with high tactics. A combat beast can handle 1 on 10, 1 on 20... I have won a few fights at 1 on over 50 ratio, at full difficulty. It's a grind.
As for how many hours you need, I have no idea. I have gone for speed runs in game time, but not for speed runs in real time. 50 hours is usually enough to get the upper hand, but cleanup can take a lot more. You can get a powerful characater (level 30+) is less than 10 hours, it's the diplomacy and relation building that take longer.
