there are mods that add more exciting quests, I believe persino and prohecy of pendor add new quests(I think).
Another mod worth looking into is Solid and shade for the orignial mount and blade( if you have it) which is a sort of mix of Necromancy meeds rogue like mod.
There are quests that involve deciphering riddles, following clues, talking to the right people with the right gear or equipment, following the path to vamparism or lycanthrope and so on.
It has perma death( although you have saftey until level 13) and you can't do EVERYTHING in one playthrough since some custom stuff and quests are locked and unlocked at character creation.
It might come of as a simple mod, but it is suprisingly deep.
Here is an incomplete list of mods with story lines: Viking Conquest, The Wedding Dance, The Astorionar Adventure, Solid and Shade, With Fire and Sword, La guerre de cent ans, etc.
There are also mods with quest chains, which can easily have a dozen steps, and lead to significant gameplay changes, but are not the goal of the game: Perisno, Prophecy of Pendor, A Clash of Kings, A World of Ice and Fire, etc.
There are also mods which have a very clearly defined end condition, like The Last Days which requires you to lead the Free People against the Two Towers, or one of the Towers against the Free People and then the other Tower, across multiple war theaters.
But outside of these mods, Mount&Blade is open world sandbox. You can unite the map without ever completing a single quest, and for many people, uniting the map constitutes a win.
