Not only was it true when I last played a female noble in Warband, but the link you provided shows a "Spirited Courser" in the starting equipment (see Adulthood, Lady In Wating). It shows you the benefits for each of the choices throughout the character creation process...you have to actually read the whole thing.
So, you are correct in that it's not just "a horse", it's an excellent horse.
Noble is part of "your father was", not adulthood.
The "noble" start is 2parts in the wiki, one "base" for everyone, and one male, one female.
It gives a shield, the banner option, 100denars and a bit of renown. No horse.
Lady in waiting is not noble, as can be demonstrated by the fact it doesn't give you the banner option.
You are guaranteed a horse tho, since all the adulthood choices have one. Quality vary.
For anyone who cares, I just went through the process to refresh my memory.
These are the choices:
Female
Impoverished Noble
A page at a nobleman's court
Lady in waiting
You start the game as a female noble, you get to choose a banner, and you get a Spirited Courser to start the game with.
You can pick noble and troubadour for example, you will not have the coursier (you'll have a saddle horse instead in this example). Or you can pick thief and lady in waiting and have the coursier, despite not being a noble.
Lady in waiting doesn't mean noble at all, both IRL, in game, and in this specific case. It means you areservant for a noble lady, a close one (you help her for all the matter that are too sensitive for the regular servant, and usually are considered a confident).
Which is also why the lady in waiting equivalent for male is "squire", which is not a noble either.
I really don't care about your opinion of what "noble" means, these are the choices players are given in the game, and this is how starting as a female noble can get a player a Courser to begin the game with.
