What do you guys start off as?
I usually go with veteran - craftsmen apprentice, smith and wanderlust for my backstory, or sometimes I will go for squire. Alternatively I do the lowest possible options with wanderlust or personal revenge for your motive.

While it still works, you can still begin with the "Custom Character Creation" Mod that was one of the top 10 Mods for this game, yet apparently will now go unsupported going forward. If you've never started in a fully customized character in numerical/stats terms, you really haven't tried all the available variations per the game's entire metric bandwidth. All the "in between" places statistically - are found and available in that mod, along with some satisfying shortcuts so that you don't have to wander aimlessly in each town searching for the Village Elder.

Think of it as....statistical Wanderlust.

Usually just hunter/steppe child/poacher/revenge so I can go ape with a bow asap

Depends...I usually try to maximize one skill, so I can ignore that stat. So Noble/page/squire maximized Leadership so I don't have to put anything into Cha, while nomad/step child/peddler gives a good starting Riding. For the last choice, I always go with Revenge or Wanderlust.
This varies with mods, since they change things... in Pendor I take the "Letter".

My main playthrough start was;
Son of a veteran soldier - His father was a guard for a lord in Balion
Craftsman apprentice - He went into learning to become a blacksmith
Smith - Became a journeyman and started his own blacksmithing work
Loss of a loved one - His father was killed in the midst of feuds between two lords, and his mother a few years later got sick and died after his pleads to their lord were refused. He had nothing left in Balion and had no ties to the country, but having heard of Calradia he thought he could make a new start there and aid the common people who he feels are looked down on by their lords.
