You won't find an integrated, optimized, UI that is finely honed to provide quick and easy access to all information the player may need at any time the player may think they need it... When you do find that, in any game, let us know. :) But, for Warband, the UI is pretty much what you're going to get "as it is" in any mod. It's not quite as bad as it looks... Once you get used to it, its serviceable.
I've never seen any mod that radically changed the UI and I think some elements are behind the exe, anyway. Text display changes will have to be done manually - Just do a quick search. However, size changes effect all text displays, like battle messages too, so you'll have to deal with that if you make changes.
One thing to note is that it does Log all the messages and news. That is very helpful. But, they're in two different menus according to the class of message, and that's a bit frustrating. :) Anyway - That message log is probably the most valuable dynamic stream of info that you can cull for things that aren't blatantly pushed to you. The other is the location/faction/character lists since you can drill-down each entry and click on all the relevant hotlinked info panes.
PS: The foundation for the game is over ten years old and it wasn't exactly done by a AAA house at that time, either. Still, it does work just fine when you get used to it.
Note: On what many mods do - Most mods, especially full conversions, will put mod options in your "Camp" menu in order to get around the UI conventions. So, you'd basically need to order your character's army to "Camp" in order to get access to those mod options and customized settings. Keep that in mind for later if you get lost in the UI and can't find a mod's options. :)
There are a few mods based on Diplomacy with similar names that make extra changes, so I apologize if finding the original is a bit tricky.
