Steam Version Vs GOG version
which one should I get and why?

This is one of those rare moments where both are equal, so it's a matter of taste. Steam gets the updates when they come, which now in 2018 is rare, but still. The Steam version is not "broken" in any known way. I know why you ask the question, because many times GOG gets a much more stable/up-to-date/etc. build with any given title vs. Steam. But AFAIK that's not the case with Warband.

That said, one thing Steam has over GOG is the workshop if that interests you.

This and I'm guessing achivements are exclusive to steam, if that matters to you.

Yeah, Warband itself has no achievement tracking. Achievements are all Steam, again, IF that matters.

Here you have the workshop, you can also do your own mod or download from Moddb or nexus, but still i find workshop AND steam all better. Anyways, be happy follow your heart's will!!!

Is it not easier with GOG to run multiple installs with different mods though?

If you prefer :
- to install your mods manually, so that you are not at the mercy of workshop screw ups
- to maintain different versions of the executable, to better support old mods
- to be able to start the game without the problems brought up by the Steam overlay
- to keep your time in game private
- not to care about achievements

... then, you should get whichever version is cheaper, run it once to complete the registry entry, uninstall it, and install a Taleworlds executable.
