There are many ways of doing it, but I think they all share one trick - You have to focus the attention of all or part of the enemy on your character, and keep them distracted as your army chews small portions of the enemy up.
Which part of the enemy you occupy depends on the mod, and your character. Example:
- In Native, you shoot the enemy commander, and have all the nearby enemies start tracking you. You hide behind a hill, and the ranged enemies find other targets, while the cavalry and infantry keep chasing you. So you let your own cavalry massacre the unsupported enemy ranged troops, and then you lead your pursuers into your marksmen's sights.
- In Gekokujo, it is exactly the other way around. You keep the attention of the ranged troops, you shoot the melee troops chasing you, dodging and weaving on a fast horse. You let the unsupported, shieldless reinforcements walk towards a storm of bow and musket fire.
- In Viking Conquest, you occupy the enemy infantry, while their ranged troops waste all their ammo on your shield wall, and get cut down once they run dry. Then you lead the enemy shield wall into a box made of your shield wall, your shock infantry, your mounted companions, and break their morale with a javelin salvo + cavalry flanking action + shock charge in the back, while you are firing, dismounted, from the other flank.
Each mod is different, and each mod lets you pull off crazy victories.
At full difficulty (135%-149%) I've done 60 on 300 in Viking Conquest, 80 vs 900 in The Last Days, 50 on 400 in Native, and 15 on 1200 in Gekokujo. With manageable losses.
1) Make the terrain your ally. Pick terrain that is favorable for your troops and unfavorable for the enemy's.
2) Play to your army's strengths - Cavalry must move/charge and not get bogged down, Infantry should stay close together on the attack, archers should attack from range.
3) Do things to the enemy that you wouldn't like them to do to you. Attack from multiple sides, hide your vulnerable units behind hills so their archers can't shoot them, bog their cavalry down in the trees or prevent them from charging by being on top of a steep hill or have a steep hill between you. (They can't easily charge up OR down a steep hill.) Harrass the enemy with cavalry archers or quick charges. Attack their archers with cavalry when they are unprotected. Catch their infantry in a classic "pincer" move, creating multiple flanks.
4) You are the most powerful force on the battlefield and the enemy know this. Use yourself to distract the enemy and split their forces. Attack when they're confused, charge your cavalry in and out, set your archers to cover the main area of battle, attack vulnerable, out-of-the-way, units yourself, to prevent large groups of your own forces from chasing after them instead of fighting the main body. Use your infantry to lock the enemy in position, making it vulnerable.
5) Pay close attention to the enemy's composition. What troops do they have? What do these troops not do well? What do they do well? Then, to the best of your ability, make them not do well at any of these things. :)
