They give the appropriate advantage to troops that would naturally have that advantage. (Infantry, some types of ranged units) Mounted units are also similarly disadvantaged.
Some "vanilla" mods substantially change the battlefield maps. Floris Extended is one and has great maps, but keeps the vanilla setting. However, even its hilly maps are very hilly. (Swamps and fens are outrageously terrible, too...)
I've been playing Prophesy of Pendor a lot, recently, and have noticed that the more extreme terrain maps are no where near as difficult to negotiate as either vanilla or floris battlemaps. Mountainous terrain can still be difficult, but it's not as bad as some other mods/vanilla can make it.
You do realize that you're given 3 battlefield map choices by pressing the retreat (tab key) option at the beginning of each engagment?.
You have to cycle thru each one of them by using the tab key.
