Of course, even in the mods you listed, YOUR sword will kill anyone with a single blow, or at most two, at high levels, even in heavy armor. That's because you can get to strength 30, power strike 10 and proficiency in the high 500s... just like the enemies in hard mods.
There are mods which try very hard to get things realistic by modifying damage type reduction, fiddle with armor values, and projectile speeds. Such mods often die, because players do not like the effects. Like it or not, in reality, plate over mail over gamberson makes you almost proof against sword cuts, and no player wants to be at the wrong end of that.
To be honest, Viking Conquest on full realism settings is about as good as it gets. If you never venture out of the starting city before you have power strike 8 and sword proficiency 200, and never bother with troops below tier III, you will not see much that is outrageous.
This said, there are mods which try really hard. No enemies have stats below what's suitable for level 15, weapons are very realistic, thus not very different from each other, the skills are nerfed so that a high level player is not all that different from a low level one, recruiting is hard and limited, and... well, combat can be a slog, because swords do not work against armor, blunt weapons are slow and horrible defensively, and because all enemies are mighty, and all lords nearly invulnerable.
There is not one that I would recommend as a better experience than Viking Conquest. My favorite realistic mod is La Guerre de Cent Ans, and it is not all that realistic. Also, the English translation isn't all that.

* There aren't really shields and what few there might be are weak and low coverage.
* There are very few mounts and those that are there aren't super heavy and have essentially no armor. Its all essentially just a big infantry meat grinder.
* Armor is typically quite light and doesn't provide a whole lot of protection overall. So you don't run into many situations where a high tier troop is just tanking a whole army of lower tiers.
* There are guns. They aren't fast, but they are powerful. With the weak armor and lack of shields people drop like flies when guns go off.
* Weapons are generally pretty fast or pretty hard hitting. Either way they cut people down quite effectively.
Just go into the options and turn off the advantages the player gets like reduce damage taken and less damage to friendlies and your corpse will join the piles easily as well.
As an added bonus, the castle and town sieges in this mod are probably my favorite out of any mod I have played to date. No slow siege engine building. No boring attempts to muscle your way up tiny ladders or anything. You rush your infantry through the streets fighting there and then proceed further through different sections until taking the main building. Enemy troops are stationed throughout and it makes for a very fun time.
