One thing: Most if not all of these top tier equipments have lordly versions. You can see helmets here http://mountandblade.wikia.com/wiki/Helmets
You can see the full helm is indeed avaliable on lordly version. You can either keep looking for it or use the cheatmenu if you really want it.
The rarity is pretty high, so you cannot rely on finding one, but if you play long enough, and check the stores that sell a specific type of gear, you'll probably chance upon it.
This said, I do not obsess over the best defensive gear. When you play at full difficulty, no amount of armor will save you unless you know what you are doing, so I prefer my character's gear to look good together and match his background, as opposed to maximizing every point of defense.
I do always get the best sword, but given that I prefer balanced weapons over tempered and masterwork ones, that's easy.
Buy up the bits you want when you can. Eventually, you'll have the gear you always wanted.
I had a character running around in lordly gauntlets and boots for about twenty levels before I found any more parts.
