What exactly does that do ?

It increase your battle advantage during battle, so I guess your units are less stupid.
and it maybe allow you to choose which unit go to the battle and organize a strategic plan but I'm not sure if it's correct since I have those option in mods and didn't tested on vanilla

Battle advantage lets you have a higher percent on the field in terms of truth. So while he may have 200 men, you may only have a 100. If you have a high enough tactics you may field 50 men at once, and he may only have 25. This is useful if you got for Quality over Quantity

To put it another way, Tactics allows the player to alter the ratio of friendly:enemy units on the battlefield. If I had 200 soldiers and faced off against 200 enemies, it would seem reasonable that we would have equally sized armies on the battlefield - Tactics can change that scenario and gives the advantage to the side with higher skill level.

I think it also has something to do with your starting placement on the battlefield. With higher Tactics skills, the sun won't be in your face, you will start out in an advantageous position, etc.

In Viking Conquest, it can give you the ability to ambush the enemy, for example.

It's the kind of thing that only becomes really noticeable when you have massive armies facing off against one another. More guys on the field and larger reinforcements can make a huge difference.

I tend not to focus on Tactics skills too much. My starting position is irrelevant since I almost always take my troops to some other place of my choosing and I don't want "more guys", I want the "right guys". Organizing my army list lets me do that much.

If you get attacked and decide to pull back, leaving men to cover the retreat, tactics decides how many men you leave behind. If you have a really low tactics skill you may have to leave back a bunch of them, but a high one may let you leave behind just one or two.

Gives you more units and the enemy less units to start with in a battle. Also decreases the renown gained from a victory.

It doesn't decrease renown or at least it didn't use to. I remember checking it in game by running the same battle twice with 0 tactics and with 10 tactics. The displayed renown value of the battle at the beginning was the same regardless of tactics skill.

I have tested it myself and verified the decrease. It was most noticeable when I was greatly outnumbered. If you are only going to get a few points anyways from a close to even battle it probably would not make much difference. Also note that the tactics skill of your enemy also is a factor as it is an opposed test. You get more renown for a more difficult battle and a tactics advantage will make the battle easier. Max renown would be for fighting a large army solo.
