For each quest you must collect certain tradable items to unlock the item the shop quest is for. Google "Assassin's Creed Brotherhood shop quests" and one of the first three results will be a site that lists all the shop quests, the items you need to collect and where or how you obtain them.
One of the Blacksmiths quests to get two very good pieces of armor requires 2 Shrunken Heads. Unlike all the other tradable items in the game, there are ONLY 2 Shrunken heads in the whole game. One you can get early game and the other one is not available until you start sequence 7. Write down the locations of both of them when you do your Google search.
Yeah, thats not a good idea. Write down all the items for the shop quests. After that you can sell everything else.
Edit; One other way to get a few of the quest items is to send your Assassin's[once you have them to send] out on assassination missions. The missions are rated by level of difficulty. Most have small red dots to show difficulty, yet a few missions will have larger, what look like explosion red splashes instead of dots. Those will give you a quest item once completed.
