Defeating humans non-lethally
So how can you take down the mind-controlled humans? I instictly just GLOO-ed them but will that hold forever? It doens't seem to hold the typhon for long. Or will it depend on if the telepath notices me?
Are there other more effective ways to take out humans non-lethally?

Disrupter pistol will knock them out *permanently* - until some time after you leave the level, when they will vanish and be marked as "safe" on the crew roster.

Stun gun, using your own mind control ability if you have it, killing the controlling Telepath. Nullwave might also work, though I've yet to test that.

If you have an access of GLOO you can cause the telepath to die from fall damage.

The taser is just as important as the shotgun in this game, upgrame them both as soon and as much as you can.

Tasing humans renders them unconscious.

With "taser" / "stun gun" etc you mean the small electric "pistol" that also can knock out operators? Because I tried it once but I either missed or the gun wasn't charged over 100% procent, which I assume you need for the gun to actually do something.
But what about the GLOO gun? Will people eventually just get free from it?

Yes, that electric pistol is the disruptor stun gun. Sadly, its default range is awful. You can either upgrade it or use the other options mentioned.

The "electric pistol" is called the "Disrupter Stun Gun" in-game - it is the easiest way to knock out a human if you also want to keep them safe (Mindjack means they might die fighting), but you'll probably want to upgrade the range on it. It's one of the most useful weapons in the game.

The GLOO gun only temporarily immobilises humans, which is how it works for everything except Cystoids (the little burster guys).

The Cyctoid Nests also react differently to Gloo. They explode when hit with it, like they do when hit by basically anything else.

Nullwave also works.

Throw one, then proceed to Q-Beam the Telepath, or skip right to that part if you don't have/want to use a Nullwave. The Q-Beam is the most effective weapon against Telepath/Weavers (especially in Zero-G)
