In this case he just uses his skill in order to create thigns (for example, books or inventions) and then either gets weekly royalties (as in case of writers) or sells the produced items at the consignment store (for example as self employed inventor or gardener)
You can also become investor in businesses of your neighborhood (that is, you get weekly payments for the money you invested into the businesses ... you canot control them however)
Businesses like in Sims 2 OfB (where you can turn part of your house into a store) aren´t possible in Sims 3, however
Nope, even if you pay out all other partners (and therefore "own" the business) you don´t have any control over it ... I think (but am not 100% sure) you can fire employees, but that´s all about it
Children**
If you use Nraas Mastercontroller, you can "reset all objects" and the game's lag reduces greatly. Check out my guide on mods for help with that. Also, businesses have multiple stages of ownership that are: partnered or owned. My other guide explains this aswell.
