The main advantage of Sims 4 is the much larger variation in body types. For example, you can have a skinny sim with a big stomach, or a sim with a narrow waist but bulky arms. Sims 3 has nothing like that, at least without custom sliders.
Many people also find it easier to change a feature by clicking and dragging. It's true that using sliders for the face can take some getting used to, but once you've learned how to do it, you have much more control over the fine details than you get in Sims 4. There are also more ways to adjust facial appearance in Sims 3 than 4. In 4, you can for example only make a couple changes to the eyes, and other than that, you need to pick from a preset eye design to get close to the look you want. In 3, there are lots of different eye sliders to play with.

On Sims 3, you can mix and match patterns and change the colors on different parts of each pattern, again with the color wheel. It's amazing how much variety you can create with the same basic clothes.
As for changing the bodies, you can only choose gradations from overall slim to overall heavy builds. You cannot adjust individual body parts on Sims 3.
Creating and customizing new characters on Sims 4 was generally more awkward for me.
