Is there a way to change your work hours?
I'd like to have all of my Sims work the same hours each day (without all having the same job). Is there a mod or anything for that?

Nope, only way is through job promotion or find another job to suit your needs.

Ok thanks. And do you know if the hours are set with each career. Like, could I quit a job and then get it back with a totally different schedule?

No the hours are fixed for each career and level.
All surgeons will always have the same schedule, same for all careers. All cooks work from 15 to 21 the same days. If they quit and return to the same job they will have the same hours as before.

some careers have a free schedule, the sim works when it wants and if it wants, like angler, gardener or painter.
Other careers like ghost hunter or stylist have fixed hours but the sim can miss work with no consequences. the hours are only when the sim can work or not.

Actually, I'm getting somewhat of a different story on another forum. Thinking about trying what they've suggested. If you're curious, here's the link: https://www.nraas.net/community/chatterbox/topic9504

Of course with mods almost everything is possible. Not in the vanilla game. With the xml it only makes different hours, but if you quit and retake the same job the hours will remain the same. Not the same as in the original game but they will not be random
As Igazor says, the schedule is slightly different in Bridgeport but at the same level all cooks work at the same time

I'm fine with them not being random; in fact, that's what I prefer. I'm still trying to translate the guide I was directed to though. Still working on it.
There is another thing, and yeah I wanted to mention Bridgeport, for finance there, that was the first work I ever tried in first city, was from like. 13 p.m until 5? or 6? something like that gonna check, but base one is like 7-8 am until 2 p.m

Also, some careers start with certain work hours, and then the hours change a bit (or become reduced) when the Sim advances in their job level. This is without mods.

Yes, I know. I'm attempting to use the guide given to me on that link I posted to change only the hours for the final tier. But I'm not sure I did it right. I'm one promotion away from finding out though!
