Moonlight Falls (the world that comes with Supernatural) has a lot of those preassigned life states, but they don't seem to crop up very often in other worlds if they're turned off on the Demographic tab. Sim University (University Life) might be the exception in that regard. I've seen a few vampires crop up among the students even though I have them turned off.
They only really make sense in the Moonlight Falls worldspace anyway, since they're part of the lore of that town. Nonetheless, I stopped disabling supernaturals as soon as I discovered how much fun fairy sims are.
I should mention that zombies cannot be disabled without a mod, but that's a temporary state that I'm pretty sure only affects sims that are "townies" (e.g. don't have an assigned home) on the full moon.
