They probably look like that for a style sort of thing. Sort of Like how monks were almost never muscle I guess, for example
If it bothers you too much it is a preference thing. Personally I don't think they look bad.
More on that: Martial art is about using your opponent's strengths against them, not being strong and slapping the first thing that comes across you. I did judo when I was a kid and I could defeat people much bigger and physically stronger than me through technique alone. This is actually one of the core fundaments of martial arts.
Cung Le, a famous Kung Fu and MMA martial arts fighter. Looks RIPPED: https://static.giantbomb.com/uploads/original/2/28122/1300500-cung_le3.jpg
Etc. etc. How a fighter looks depends on their personal training regimen. The characters in the game are way too thin - no muscles to speak of on their thin arms.
For example, less bulky models allow for the movement of the character to be clearer to the eye, which is very important in this game as you'd need to identify easilly your opponent's self-customized moveset.
It also helps minimize equipment clipping.
And everyone looking the same means no hitbox complaints and there would be no confusion regarding where the hitbox is.
With Shaolin monks (I could give you boxers too, but that would be ridiculous): https://cdn.shopify.com/s/files/1/0940/1604/files/yellow_mt3-00088_grande.jpg?v=1469693466
I see. Those are all quite logical and practical reasons. Any lore reasons btw?
None that I am aware of other than that we probably never actually need to eat maybe? Lore is quite vague even by vague standards. You are by lore immortal, so whether you have need for food or not is anybody's guess.
Your character is supposed to be a versatile figther, so keeping a balanced physic which would allow them to basically use any kind of movement they want could be considered a "lore reason".
Other than those random guesses, nothing too specific.
This is backed up by the fact that your mask makes you not need to eat. No food = less bulky.
I wouldnt mess with Fat Bastard :P

I agree with the aesthetic of Absolver and the idea that technique > power is uncontestable. But the "Khalt's" fighting style in Absolver is described as "hulkish" in some ways, Judo is heavy on technique but some of the moves in Absolver would take power to perform hand in hand with technique. A weak person wouldn't be able to "absorb" a punch to the face/gut/lower region while delivering a powerful blow to the opponent that slowly homes in without flinching.
:/ What a terrible world to live in. And fight in. YIKES.
Also don't forget real martial artists out there such as Michael Jai White, Scott Adkins and Cyril Raffaelli who are jacked, yet super flexible and can perform moves that everyone on this board wishes that they could do.
