Assassin's Creed series (especially the early ones) - parkour and stealth;
Styx: Master of Shadows and Styx: Shards of Darkness (I like these two a lot) - slow parkour and stealth;
Prey - stealth and immersive sim;
Dying Light - parkour and satisfying combat system;
Watch Dogs series - hacking and a bit of parkour + stealth;
Middle Earth: Shadow of War/Mordor - parkour + stealth;
Mirror's Edge (Catalyst) - a lot of parkour and freerunning;
Hover - parkour, but almoust 0 stealth or combat;
Submerged - some wallclimbing with an adventure;
These come close to the Seven, but not one that look and plays very similar - it's one of a kind, if you ask me. Also, there's a short DLC for it, you might want to try it out if you didn't do so yet.
They Always Run is a pretty good game that I would like to add to this list for no reason.
It's amazing, imagine fallout classic but western and new (only not turn based).
I even kickstarted that one since i really liked Syndicate (which it is kinda based on or a hommage to. +Tthanks i'll definitely check Weird West!
Then Thief and Styx series are for you. Also, Winter Ember is a good one, despite mixed reviews.
I played & enjoyed the Thief series and now am in the middle of Styx thanks to your recommendation earlier. I will also check out Winter Ember with the next sale, that one would have been completely off-radar without you telling me about it, thanks!

Vampire: Masquerade - Bloodlines (stealth-action/RPG)
Divinity: Original Sin 2 is somehow similar, but it more of a tactical game - you can be creative with stealth combat, but facing the opponents openly is almost unavoidable.
Weird West has some odd location design and playable characters (you have to use all of them in order; some abilities carry over between them, some do not).
Spiders' games (The Technomancer, etc.) usually favour the stealthy dagger users, but the open combat is there as well.
Thanks! I played most of them except Aragami, Encased and MGS (was console only then), will check those out. The more recent Vampire: Swansong has also some great stealth sections btw. Also Colony Ship (RPG, advanced early access) has some quite good stealth elements.
