They're evil.
Preferably, with the Teutonic Knights in vanilla, and the Ritterbrudders from the Teutonic campaign, but any heavy calvary will suffice
Also, Pavise crossbows and mounted crossbows
My favourite unit in the game are English Armoured Swordsmen. They're the most solid and most spammable infantry unit in the game. They're not OP, but they're spammable, recruitable in a measly Fortress, and will draw with basically any other melee unit in the game 1v1. Of course, I never fight 1v1... more like 2v1.

which reminds me - I need to play a Milan campaign training only Genoese Crossbow Militia
Also Yeomen Archers-I find them more cost-effective than Retinue Longbowmen-they can hold themselves in melee, and are obviously brilliant at range.
Honourable mention to Heavy Billmen, showing commoners can do it too, and the Venetian (caraccio?) standard- it's just cool.
Ive come up against 2 armies holding lots of these and they have stopped my rampage dead in its tracks a few times, where as most other forces i will suffer attricion slowly. Pavise make it just painful to watch, close to warcrime levels.
Its no wonder crossbows were frowned on so much back in the day.
Gameplay wise- Norse Swordsmen. Too cost effective.
Aside from having high defence and AP damage + solid charge?
