You mean if people prefer Castles or cities?
In that case none are better.
You cant realy build up an empire with only cities or only castles.
Cities lack good units and most factions dont get any cav out of them (exept merchent cav, but that reqeuires the merchent guild).
Castles lack income meaning an empire consisting of castles will pretty much always be bankrupt.

You need a good combination of them both to fight effeciently.

Some Factions excel at getting decent units from Cities. If I could remember, the Italians can even get Broken Lancers when their city level is high enough,Byzantines can survive pretty well with only cities(Byzantine Infantry),also Some Muslim Factions(Turks)Can only get their Best unit(Jannisaries) from Cities.

Probably Venice. Constantinople and Antioch are also damn good.

Zagreb's got some pretty tasty mines, and in the late game you can hire Serbian Knights and Hussars from its hinterland, which is nice.

Constantinople, Venice and Vienna for cities. Constantinople is great because it starts big and it's surrounded by rich resources that each can pay for entire armies with good merchants on them. Vienna because of its mines. Venice because it's super defendable with only one tile next to it so to get to it they have to assault a chokepoint next to your city and the reinforcements inside the city can be free and deal with public order issues. not to mention with a merchant bank and tons of high tier trade buildings you have the richest city in the world.

Metz for castle because it has some nice mines and it blocks a chokepoint

Depends on faction, for most of the eastern ones (Romans, Turks, Egypt) the cities of the Levant are fairly wealthy with valuble trading material within a turn for merchents.

it doesn't really depend on the faction most if not all cities and castles are objectively worse or better than others

Inverness(Castle),York, and Dublin is in the middle of Useless-Decent.Since Inverness as a Castle is a waste of region,York has too small population, and so does Dublin, also it will take sometimes for York, and Dublin to grow though.
definitely timbuktu

i love that settlement

it rebelled twice

If we are into joking, then yes all those villages around Lithuania will bolster my economy and defensive capabilities.

Rhodes is so good it can never be attacked simply by filling the island spaces with 1 unit troops

Tunis is so defendable you can bog down eight crusading armies on it

Helsinki is another highly defendable place, so is Caffa

Arguin is great for simply building a boat and placing a spy in it, watch the AI try to send fleets to attack it

Nicosia is a great place to raid and pillage the local area from

Trebizond and Caernarvon are excellent landing/staging defensive areas

Adana, Antioch and Aleppo are all good, but work amazing feats together

The AI ignores Palermo alot

Northern Italy is a massive death trap

But my most liked region is Tripoli, simply due to the massive one way land hike for forces coming from Egypt

If I'm going the other direction across the map then adana is excellent
