Touch friendly / Mobile versions?
I dont see why u would not do this.
Lets say, for free you allowed to play "as is" only with bots, and maybe friends(self hosted).
With paid version customer can use services, like matchmaking, ranking and so on.
While porting to different platforms depend on engine you use, touch friendlyness is not that hard, if you have it in mind.

I... believe we're talking about two very different things here, as for a "for free" version, I quote:

Now if we're talking about touch friendlyness for computers, I think "yeah, why not", I don't think it's that hard to associate with as it's usually a native feature of those devices (granted, personally I've never worked in this area in particular, and I don't mean to say it will be spectacular as a control method, just possible).

Now, for different platforms I fear it's a complete different beast we're talking about.
For "traditional" consoles (let's say, PS4/XBox1/Switch/etc.), these kind of games don't translate really well due to the precise selection you just don't get with a joystick.
For touch devices (3DS/Mobile), the 3DS has around a year of "natural" lifespan, it's not worth it for an indie company to start development for the system at this point.

For mobile devices (I guess this is what you meant originally), It's clear the design of the game so far has been only focused on computers, therefore we can't make sure everything will be compatible. Also, there's many problems games like this usually have on small-screen devices like phones (most of android/ios devices) (touch precision, screen resolution, network connection, etc.) I'm not saying it's not doable, just harder than it might initially seem and, as this product is barely on beta, it doesn't make much sense to start another platform development for now. Also, it's a small team working on it, not comparable to most multi-system relases.
