Stoat -
Lords will self heal within a domain zone.
All Civilians will self heal while worshipping at the Chapel (Town Hall). So rotate any wounded workers back to the Chapel as they will still generate Faith (Lore) while healing.
Stoat can still use Viking Relics as Monks. They will heal as normal.
If you get 4 buildings, Stoats want an anchorage, a food building, Probably fantassins unless you are confident keeping archers alive using other things to tank. This grants you basic militia for free.
You want your lord asap, do this by speed mining 5 iron and finding 100 coin from a tomb or shipwreck. If none of that's available, get a militia to let you expand where needed.
Lion -
All Civilians will self heal while worshipping at the Chapel (Town Hall). So rotate any wounded workers back to the Chapel as they will still generate Faith (Lore) while healing.
Lion can only use their own buildings to make monks, so if you're worried about healing focus on it.
They can take the anchorage or market depending on map choices.
Having said any of that, your units should be healed in ally territory (after all allies are fully healed) There is also nothing stopping you from requesting healers from your ally for your own territory.
Either way, You should be deciding on a full build of 8 buildings with your co-op partner/team.
Christian clans can use most of the viking unlocks during Bifrost while still maintaining the livability mechanic. Vikings can also use Christian buildings but there are some clan specials to be avoided.
Shamans are always a good choice, the pyre will be burning all the time and they can be moved around or with the military to heal where needed.
Stoat is better. Their less Britannic and more Irish druids, the Stoat is also a cute slinky noodle too.
