Pillars 1 - very very long game. Its good but as all games do, it has a couple shortcomings. Been over 2 years since I last played it so can not comment on current condition.
Pathfinder is a buggy mess right now. Several feats do not work , or only partially work. Some quests done out of order fubars other quests. SOme synergies dont apply right when used together. One poster has a long list of broken stuff in the game that the devs have not fixed since early access.
This is the best CRPG that was ever made even though Baldurs Gate 2 is more popular, maybe because its more story oriented and less action...

You can turn off the kickstarter text stuff though and only have the actual story parts left in the game. Maybe that was a mod though. The combat is basically just an evolution from the BG combat.
If the story or text is the most thing you care in PST,you may try Disco Elysium.And BG2(with Improved Anvil) might be the top of DND(2E) battle logic performance.
Of the 3 games mentioned in the original post, I'd say Planescape > Pathfinder > Pillars
Pillars 1 is also a good game, but it just drags on for very long, and unlike BG2 it isn't SO great and diverse that the content can support that extreme length. You mostly fight the same enemies over and over.
Pathfinder: Kingmaker has the best graphics and combat out of the 3, if you care about that. While Pathfinder has the best combat system, Pillars is probably the most combat-heavy. Planescape by far has the best story. Regarding the setting, both Planescape and Pillars are unique, whereas Pathfinder: Kingmaker is kind of "standard" fantasy.
Pathfinder is the best regarding the character system, class variety and the freedom when leveling up - overall the best if you want to play a custom character.
Overall I'd say regarding the different mechanics:
Graphics: Pathfinder > Pillars > Planescape
Story / Setting: Planescape > Pillars > Pathfinder
Companions / characters: Planescape > Pillars > Pathfinder
Combat system: Pathfinder > Pillars > Planescape
Story over combat (how often you can avoid fights): Planescape > Pathfinder > Pillars
Leveling system: Pathfinder > Planescape > Pillars
Lack of frustation / how fun the flow of gameplay feels: Planescape > Pathfinder > Pillars
Variety of gameplay: Pathfinder > Planescape > Pillars
Some additional story-focused RPGs I can recommend: Disco Elyisum and Arcanum: Of Steamworks and Magic Obscura.
