what i wanted to know was is what you can buy from them, and other things. do they influence the history? do they give you benefits? and the sort.

For instance joining the Sensates, do all those quest lines until after you get Fall from Grace to join you. Then finish up the last couple of stragler quests and then look to join the Godsmen(iirc the name) faction. 90 % of quests will be done in area you found them, with only a few stretching over the course of the game.
According the PS:T Wiki there are five joinable factions[torment.fandom.com].
Dustmen - I think you get access to buying stuff from one of the dustmen, I think[torment.fandom.com]. According to this FAQ[gamefaqs.gamespot.com], "Joining the Dustmen gives Nameless One a +4 AC boost vs. Undead, because of the Dead Truce."
Godsmen - This one gives you access to some really good weapons.[torment.fandom.com] Ascension, Enlightenment, and Reason are an Axe, Dagger, and Hammer that each give a +1 AC and +1 Charisma, in addition to being +2 enchanted weapons. They're among the best weapons you can equip before leaving Sigil. There's also a permanent +1 WIS that you can get only if you're a Godsman, and fulfill some other requirements.
Anarchists - access to buying the 4 anarchist earrings[torment.fandom.com], none of which are particularly good. Though there are some interesting plots involved in joining and being an anarchist.
Sensates - Gives the ability to use the sensate touch (heals others and hurts you). Also allows you access to buy from the Sensate Vault[torment.fandom.com], and visit some areas of society of sensation, and use their memory stone things for free. Most of this stuff can be done without actually joining, since you used to be a sensate in a past life.
Chaosmen / Xaositects - Benefits? Uhhhh.... Do this and you'll never make it back to having a lawful alignment. Is that a "benefit"?
One thing I didn't know until recently, is that it is possible to be both one of the Godsmen, and secretly be an Anarchist as well. The only dual-faction membership that I know of.
