Owned in Uplay
I bought the game on Uplay because I found it with a better price. Can I somehow add it on my steam library? Having bought other Ubisoft games, Steam launches Uplay anyway. I don't want to add it as a non-steam game.

As far as I'm aware no. Unless Ubisoft gave you a code to activate in steam, but I'm guessing they didn't. Adding it as a non-steam game is the only way. There aren't any achievements or anything like that though. There is this guide, if you were trying to have the steam overlay enabled?

You can't add it to your Steam library (as in +1 to your game count), however you can enable Steam overlay in it via "+Add game>Add non-Steam game"

If you buy the game on Steam, then you will have 2 copies of the game in your Uplay library.

Just to put an official answer on this topic: no, your Uplay copy of the game can't transfer to Steam.

The version you buy determines which application will actually download the game and patch it. It is a key for that application alone.

If buying the Steam version determines that it's final, shouldn't it not launch and play via Uplay? How is there no way to make it work vise versa? This is a bit more of a personal issue that I'm willing to share with personal messages if this is not a problem.

Steam is just retailer, and buying game from it will add additional useless DRM witch steam is forcing on you.
Steam does not own the game, it is just selling it to you.
Uplay is the main server and retail platform of All Ubisoft made games
Also Uplay is used for authentication of the game and online/multiplayer connectivity
