Altho the new castlevania's are also pretty lame.
People like Bayonetta because of humor and characters (or at least i do), thats pretty much it.
And Gungrave! You for got that one.
Seriously though. Seems like games the last couple of generations take some elements from each other. Especially in the action/hack and slash genre.
There is probably a progression of some sort in terms of the development and character designs female protagonists and the like (Tomb Raider) etc. As for why it's so popular, anyone's guess. Honestly not sure it really is all that popular.
I know personally I really dig the the special attacks, and over-the-top violence. It's PG doing what they do best. I suppose it's at least earned a place in the cult classic section of gaming.

I played Devil May Cry 3 and 4 on PC,
I played Killer is Dead on PC,
And noone of these things stand a chance against Bayonetta, in any way.
It works perfectly on top of that keyboard and mouse this port is God Like for me.
DMC is alright, Bayonetta took a few pointers from it.
I still think both of them would benefit more from having more actual projectiles (both sent by you and the enemy).
Also its a game with deep combat mechanics and many combos. and yeah it can also be a pretty hard game (if u dont use potions all the time and dont want to get a lame rank.)
The arcady and japanese style might put some people off, but it has it charm.
Then there the girl herself who is overly sexy and fighting for fun. The comedy is gold , the music is fantastic. There a tone of unlocks and costumes. Whats not to like?
