Is there a way to see your progress towards the platinum ticket or sai fung?

Or at least for the platinum ticket, how much does it cost to buy everything else in Rodin's shop?

There's no way to see it at all. You'll just have to progress as far as you can until the game lets you know you've unlocked it.

Just count. I already 2.5x on normal , now doing hard. So around 60+ maybe
Ticket ? See what you had bought on shop. Add with current halos you have right now

Ticket? Just do chapter 2 end battle with the kilgore switch glitch and rack up millions of halos. Prepare a bunch of magic replenish candies.1st set sword+durga, 2nd set whip(anything actually)+kilgore.

1st set->PPPPK(you see/hear a slowmo animation of bayonetta getting ready to kick)->switch 2nd set->kilgore will be replacing the durga for the kicking animation(racking up combos points)/spam K till wicked weave->switch back 1st ->repeat... Keep witch time up with bracer of time

If you play normally, you'll only managed to get around 5 million halos for complete playthrough 4 difficulties(easy,normal,hard and climax)... or around 70 chapters.

I just made one attempt on normal and managed to get the 10 millions halos(I made about 18 million...) required to unlock and buy platinum ticket. Fighting the secret boss however.... is a real pain.

Sai Fung, no way to track and only can make a guess based on play history(RB button to open options on chapter screen->play history).

Need to complete 100 chapters on normal and above.... Just keep repeating prologue chapter on normal till it unlocks, LP will pop up for you. Visit gates of hell to let Rodin craft Sai Fung with LP.

Platinum ticket is unlocked at 10 millions, so when you unlocked it you will have about 5 times as many halos as you need to buy everything in the shop anyway.
How much everything in the shop costs depends on how much you have unlocked. There are items in there not unlocked during normal story progression so nobody can tell you how much exactly you have spent there so far unless you list what you have bought. but it's surely not more than 3 millions, probably a lot less.

As for the Sai Fung, there is no way to track anything.
