Try Blazblue and play against friends with stylish mode. Or stick with what you can play.
Macro controllers/sticks are out there of course, I'm sure there are super sensative controllers out there aswell. Just like you can get cars with true powersteering/brakes.
There was an "easier inputs" mod for one of the earlier iterations; I was partly fishing to see if there was any news about it being updated for USFIV.
I have an arcade stick, but that doesn't make things any easier. If anything, it makes things harder for me, having never been an arcade kiddie.
I'm aware that I can get some fancy peripherals to setup macros on, but with 44 characters and who knows how many specials/supers/ultras I don't know if I could even fit that many macros. Also, I doubt I could get any of my friends to play with me if I've got macros on my side; I'd probably have to get two peripherals and setup macros for each, which seems like a hefty investment.

I suffer SMA type 3 and I'm kinda where you are but at a most advanced stage. My advice would be using voice software to run macros assisting you. Try Voice Activated Commands, has a free trial period. Feel free to add me as a friend if you want to have someone try help you.
If you have a PS3 you should consider BlazBlue... his stylish setup let you perform specials and supers with just a button or simple comands.
Learn 1 character, only 1 as you do not have the luxury of learning multiple characters.
Stick to charge characters as most have solid normal attacks which are only a button press. Their specials are inputted by holding down or back(downback to charge for both) and release by pressing up or forward. Alot of their specials are pretty safe on block also. So with their specials and normals you can actively keep your opponent in check.
Personally i recommend Guile as he has great anti-airs and forward control with his projectiles with minimum excecution. You will almost never use his super and his Ultra's aren't that usefull either, even high level players do not use them alot.
Of the motion characters i suggest Cody as you can still get far with minimum excecution. He doesn't have DP motions, his anti-airs are b.mp and st.hk with soe other situational anti-airs. In the neutral games you mainly use simple button presses and his command normals.
I'm unsure if you are able to cancel special attacks from normal attacks, but they are needed to get any damage with Cody.
His links are simple and easy and do nice damage. His attacks do alot of hitstun so you can be a little slow with some cancels.
This whole story is assuming you can still physically perform these tasks.
I still think charge characters are the way to go.
