What you are most likely seeing is either just people who are physically moving around their playspace, or are very tall, or have their floor height misconfigured, or who recentered themselves at different heights, or are using other programs such to move their playspace around.
While this isn't against any sort or rules, there is nothing in Bigscreen itself that allows this.

The cheapest and most fuss-free way to get room scale tracking would be Windows Mixed Reality. You can get a used Samsung Odyssey + headset for $300ish if you look hard enough. That's what I did and I can walk around a bit, but have to "reset" my position if I sit down in a chair.
