With the original game, around a dozen dupes is fine. With Spaced Out DLC, you have more bases and probably want to go with ~4 - 8 each.
if you want your dupes to do something and they're doing something else, you can lower the priority of that less important thing you want them to stop doing.
it takes tweaking and experience.
i build my priority from bottom up. i paint everything as priority 1-2 when built, then up the priority of things I see them struggling with.
ONI storage uses a double priority system where not only does priority control the order of tasks, items will also be forced into the highest priority storage. Changing a single value will create a deluge of work orders as dupes forcefully move items around, or if you lower the priority they will empty it out and never use it ever again.
There's even more disasters around the corner, because storage automatically tags new resources as they're discovered. Any level of custom priority will turn your carefully planned storage into a mess.
Keep your basic storage all at priority 5. Do not touch it, do not look at it, it does not exist as a game mechanic. Fridge storage is the only priority that won't immediately cause a disaster, but try to keep them all the same value.

And I believe I found the main problem as to why my dupes are not storing food even on high priority, I have a fridge but no food storage box and I assumed that everything edible could go in the fridge, but I guess not... I still have to test it

You still end u with the occasional hiccup, like forgetting to add waffles to the selection for the dining fridge. And I am amazed there is still muckroot around so late in the game ...
Another solution is Auto-Sweepers. Here's my setup, hope it can inspaire you. Storing food in cryogenic gas (below -18 degrees Celsius) keeps it permanently fresh(by the way, hydrogen is a good choice). Here I used the property that the microgram gas exchanges heat very slowly with the environment, so once the microgram gas is lowered to a very low temperature, it stays at a low temperature for a very long time, thus keeping the food permanently fresh.

More dups can be more efficient, but they also require you to build more facilities to meet their survival needs. For newbies consider an 8-12 dups setup first, then move up to 16,20,24 or even 32 as you become more proficient.
