What resources are non-renewable?
Title.
My current attempt is going good with water, Oxygen is getting there, but I'm starting to have trouble with copper. I go to build a thing, and it asks for copper that I'm apparently out of in storage.

depends on map.

Copper vulcano spits out motlen copper. hatches make coal. etc etc.

if you are out of copper use iron.

Pretty much everything is renewable in some way (except certain seeds), but not everything is available with every start.

Iirc with vanilla worlds you might end up with non renewable tungsten/wolframite, if you are unlucky. And I think chlorine might sometimes be non renewable too.
With SpacedOut!, so far I've always seen a chlorine vent somewhere and you are guaranteed a tungsten volcano.

Otherwise the hardest thing to renew is probably metal ores as you will need to ship them in from space POIs. You just need to be fine with any kind of metal ore, don't put your hopes into something specific (not having renewable iron ore plus no iron volcano is probably possible but should be extremely rare).

Oh, and I've seen Volcanea worlds without renewable oil.

Edit: Oh, and renewable doesn't necessarily mean available in high quantities/rates.

If you are running out of Copper ore, my bet would be you are early in the game. If you are on a standard map (Classic game) dig down to oil biome to get Lead. Lead is refined by nature and is best used for basic electrical wiring. Spend time replacing your copper built Heavy-watt and regular sized wire with Conductive Wire and Heavy-watt Conductive Wires.

You will get a 100% copper refund from all replaced wire you rebuild.

If you are in Spaced Out! you will need to teleport to the linked asteroid for an oil biome, then ship the Lead back to home base.

It has more than one ues; unless you try to make several thousand tons of insulation, it's never going to run out.

Usually the water you get from all the various steam vents and water geysers of all kinds should be enough to tackle about anything, no?

Some limited extra supply may be gained from processing slime into algae.

Melting cold biomes.

Extracting oil from a well, turning that into petroleum (the hard way, not with an oil refinery!) and burning it in a generator will give a little more water back than you put in (something like 3kg in and 3.75kg out). Going the extra mile and turning the petrol into nat gas will give even more back (3kg in and 5.025kg out, if my math is correct; well, and you'll be swimming in power).

With SpacedOut! you can get some limited supply from (polluted) mud.
Mud is also produced by Grubgrubs.

Something I haven't tried yet, but am meaning to at some point, is using Grubgrubs to speed up growth of Arbor Tree branches (they will tend to branches, but I never came around to check if that actually speeds up their growth, as they cannot be actually fertilized). If that actually works then Trees -> lumber -> ethanol/dirt -> pwater (through generators) would be water positive (it is already dirt positive, even without grubgrubs), so you could produce practically as much as you want (well, you'd probably be limited by sulfur supply to feed the critters).

Lavatories will produce miniscule amounts of water.

I might have forgotten about something...

Also mining it from space POIs (water and ice in various forms)

granite isn't renewable as far as i can tell. I don't recall a way to make it or get it from space POI

What exactly do you doubt? As long as the numbers on https://oni-db.com are correct that's just putting the numbers together.
And I'm pretty sure I've written that oil->natgas will be more efficient than oil->petrol.

In Spaced Out, Uranium is non-renewable, though there should be enough to run a reactor at full speed for tens of thousands of cycles (assuming you refine it from natural tiles using beetas, ofcourse). Even just on the standard radioactive asteroid your teleporter links up to, there should be more than you'll need. After refining, mine came up to about 81 tons, which is enough to run a reactor at full tilt for 8,000 cycles. There's also sources of uranium in space, I'd guess totalling another 80-100 tons after refinement. So, you can get an awful lot, but it will eventually run out if you play long enough.
