Only solutions are to wait for your "essential" mods to update or force a game downgrade and also force mods to not update. Somehow.
Unless Klei adds mod versioning to ONI you're stuck with broken mods either way, I say just wait.
Well in the specific situation, it did work. Unless a mod is already interacting directly with new content that has been added, newer ONI mods should generally work with most older versions of ONI that are not like major overhauls of systems.
Regardless, unless Klei implements mod versioning and support for tying mod versions to game versions, you can't really eliminate the issue.
