93 tile "stable" with 4 hatches, all "overcrowded" - why?
Is there a trick to these? My stable is 4 tiles high, does that matter?

It needs to be 96 tiles to support 8 hatches.
Just how it is.

Whoops
21 wide and 14 high...
Split it in half...
each ranch is 9 wide.

Since its 9 wide, it doesnt take forever for the hatch to show up to get groomed.
If I made it 4 tall...The width of the ranch would be enormous, unless I did some foolery with a door and block...Also I pack my ranch with automation so I make use of the space above the hatches.
So 1 dedicated Rancher can handle quite a few ranches.

I have about 6 of these ranches.
4 Puft Ranches
And 2 Drecko Ranches

For 3 Ranchers.

Built pairs same way,

I did my best to keep all the Ranches as close together as I could...So the Rancher doesnt have long travel times.

96 tiles can support
8 Hatches,
4 Pufts,
6 Drecko

its differrent for each species.

I build a box 14 wide and 21 high.
Split it in half...
So each is 7 wide.
Then I fill in the unneeded tiles with doors or blocks.
Then automate stuff like egg and coal removal.

OP, first off you should provide a screenshot so we can see the actual story. You description does not contain enough info to tell you the actual reason...all we can do is just guesses.

Second, the response given to you is on how he does it (nice but that doesn't answer the question) and provides wrong info: a 96-tile stable can support 8 Hatches, 8 Dreckos, or 6 Pufts.

The following link shows the amount of space per critter needed and may answer your question (I assume eggs are affecting the critter count...but this is a guess without a pic).

Stable being 4 tiles high does not matter.
As said above, a picture will save a thousand words.
Eggs are often the culprits for cramped stables (they do count as the total critters, even though it doesn't show on the critter drop-off).

Is it 8 hatches for 96 tiles or 8 for the "minimum" size?

Is there any mods to improve on this, up to the 20 if tame?

8 for 96 tiles. Or: every hatch needs 12 tiles.

I think the number of Pufts is off...They need more space than stated on wiki.
I was wrong about Drecko, it is 8 to 96.
I checked in game real quick.

Bear in mind that the critters dont need to reach the space that is available to them.
So I make the ranches vertical.

Dont see a reason for a mod, cause ultimately the need is for more ranches, there will be a lot of these packed into a base in this game.
As I said, I have 6 ranches for Hatches...I am thinking of adding more...And more Ranchers.

12 tiles per hatch. 96 tiles is the maximum size of a stable, which limits you to 8 hatches.

Eggs count for "cramped" status (which prevents critters from laying more eggs) but not for "overcrowded" (which makes them "glum", substantially reducing their productivity).

Do you have other critters in the stable? E.g. shine bugs?

Eggs within your stable still count against you. So you need a sweeper to remove the egg and place it elsewhere so the critter is willing to continue reproducing.

Is there a mod to remove or make it possible to create larger rooms?

I recall seeing a mod to make rooms bigger, but not sure if its still up to date.

If you want to get effecient hatch ranching before you have a mechatronic engineer, you can also rush for some automation with a critter detector, then just make the floor out of mechanical doors to drop the eggs when they push your ranch above your limit.
