The HUD and controls could be a thing to work on to make the game feel well. That's true there is lot of sortcuts in the game actually. But i think it's possible.
These game woulb amazing on the touchscreen, but it think that the Switch will have some memory issues to calculate everything

That's just me though and the developers aren't really talking about ports when the game is still in heavy development.
We can barely dream for 60fps in a fully utilized base right now with speed 3 on a PC. The game would not run at all with the limited CPU power of a switch. So when the devs say no, its not just because they lack the manpower to make the port. The switch just cant hold it.
As other peeps here said. This game is very CPU intensive and is already very software limited in terms of optimization.
Just because a game is 2D doesn't mean it doesn't require a good computer, or powerful hardware. Which frankly the switch doesnt have. Some of their own switch games already stutter at times like breath of the wild.
Now, that's not to say it's good for getting to the end of the game, especially when you have tons of gases around. But I think people are grossly underestimating the performance of the Switch.
Its like trying to compare a omni wrench with adaptable fittings and a standard wrench that can only turn certain screws. Just in this case your laptop is the adaptable one. The standard wrench is slightly better than the omni wrench to turn its specialized fittings but cant turn other fittings that arent that size. But the omniwrench can since it can adapt its size easily.
