Make a space or use existing one to put your polluted water in, you can use it later on.

Polluted dirt is the Compost under refinement tab.

Set it on high prio because polluted water and dirt emit polluted oxygen.

1. Place a Bottle Emptier over place you want to turn into polluted water reservoir, set Emptier to polluted water as you do with storage containers
2. Polluted water produces polluted oxygen (wiki says it converts any gas, if pressure is below 1.8), so make sure room/reservoir where you plan to store the water is properly isolated, has good pressure, a puff or deoxidizer.
3. Composter is the only way to process polluted dirt early on, polluted dirt also produces polluted oxygen

Polluted Dirt goes into the Compost building, under the Refinement tab. You unlock Compost places by researching "Basic Farming". Just make sure you have Wash Basins leading up to them, as dupes who handle Polluted Dirt are bound to get germs on them, which will need to be washed off.
