1.) make the dispenser sweep only
2.) make wherever it lands handled by a sweeper which then puts it into storage so the dupes'll leave it alone.
3.) make it drop into a place that the dupes can't get to (like a pit, or an access restricted door).
Don't allow manual use of the loader.
I also noticed that there is something called manual control, but there is no separate button for this setting.
Or to use an automated critter-counter locking the doors until a certain amount of hatches hatched.
Or place some egg-breading thingies in there without energy and have an auto-sweeper put the eggs right into them.
Or use the critter-drop-off in your ranch to auto-wrangle and have dupes bring surplus hatches directly to your butcher room, without the need of an additional egg-dropoff-room.
Make a room where you drop off the eggs that is inaccessible to dupes with a a door into the "airlock". Since hatches will move around once they hatch they'll eventually walk through the "airlock" and step on the weight trigger. Once they walk through the door have it close the door they walk through and open another door in front where your dupes can collect the hatch and move it where you need them to go.
Don't bother. We are too dumb to understand this.
