When u deconstruct, on the lower right, u see a box that specify which type u want to deconstruct or all of it.
You can build stuff from different materials, u see it when click on the object u want to build a smaller longer box appear next to it.

You can also repeatedly click the same tile to cycle through all of the objects stacked there.

Individual constructions can be deconstructed by selecting them and hitting the deconstruct button in the info window.

A faster way would be to open the corresponding Overlay, and then use the Deconstruct command. While in the various Overlays, the Deconstruct command will be locked to objects in that Overlay. So for example, in the Plumbing Overlay, you can only deconstruct Pipes with the Deconstruct command. If you switch to the Electrical Overlay, the Deconstruct command will automatically switch to only affecting Wiring.

Yes, yes you can. When you first select the object you are about to build, before you place it, at the extra panel that opens next to the build menu. Below the description of the item, there should be a series of boxes with various materials in them. Mousing over the materials will give you a summary of (most of) their benefits. For example, Sandstone (poorly) indicates that it increases the Decor value of the object by 10%.

Currently, Granite is pretty overpowered, because it increases the Decor value bo 20%, increases the thermal resiliance of the object substantially, and when constructing blocks increases their pressure resistance.
