You can set max laterals based on realism values, or just use whatever value you are alright with, and reduce the Gs until the excitement rating peaks. Certain ride types create more excitement with different G value thresholds, some members here did some study on that.
Usually I would transition before and after the turn section. If its a constant turn, the whole section is recommended to be banked throughout if the Gs are to be kept even. But the bank angle can be changed depending on the speed. Example if it is a descending turn, then perhaps the bank angle and transition at the end will be larger.
You can keep the visualisation on as it builds. The virtual coaster will constantly be dispatched and recompute the forces. You can just build something that works first, then revisit the transitions and change banking to control the laterals.
To do so, while in build mode, right click to select the already built track section, delete it, now change the banking, build the section again (the same track type will remain selected for you). You will notice a break with the track in front of it. To resolve this, select that front track, delete it, and rebuild the same section again. The banking will follow the new setting you chose
