You're right, wrote this at 5am, I'll reread after work and make some much needed edits.
Best way to start is purchasing the claim with the 40oz. I would straight for River Town (no loan needed). Also is better in for when you reach T3 - no need to fight big hills.
I would mine enough gold on day 1 on to repay the first day loan and buy a wave table. With that, you can fund T2 without loans by the end of day 2.
With that setup, by the end of day 4 you would have T2 with big excavator.
That is working 8am-9:30pm, sleeping at night. With that setup you can easily get per day:
T1 (with wave table): 30oz.
T2 (small excavator): 45oz.
T3 (big excavator): 70oz
It sounds like you are continuing to dig with just the shovel for almost 2 days game time. While doing it without loans has its perks I designed this guide to help newer players get into the meat of the game faster, which has the drawback of loans. As for the fighting with hills, I personally found River Town to have the most hills in the dirt and on the claim in general. I highly recommend checking out Pine Valley. Has a little higher tax on your gold but is almost completely flat land. Also with the set up I laid out you could take the max loan for the second time and purchase the Old Arnold Parcel as well as everything else needed. Also how do you manage to get 30oz from the hog pan in 60 mins?
Correct, 2 days with T1, but with a big difference. On second day, I have a wave table (too much time is lost picking nuggets by hand). Gold yield in River Town is higher. From 1.5oz to 6oz, average would be 3oz per bucket.
I think for T3 hills that matter most are in the drop point, not within the claim. You can start mining from the border outwards.
