I never really saw much use for multiple displays shared for one application/game, but everything depends on your preferences.
The resolution settings are stored here: "\Steam\userdata\<yoursteamid>\446800\local\settings.lua"
The task bar can be set hidden or to auto-hide on one/multiple screens as well.
There's a chance that I am misremembering things but here's what I think happened:
First I tried changing windowSize like you suggested. That caused the game to open in a window that was almost the correct size but there was still no change in the list of available resolutions. So no full screen.
Then I changed the value of oldWindowSize to 5760 x 1080. When I started the game it came up with a message asking if I wanted to revert to old resolution. I clicked on yes and it switched to 5760 x 1080 full screen. The 5760 x 1080 resolution even appears in the full screen resolution list now.
On a side note, I have an ultrawide 2560x1080 monitor. For actual gaming I much prefer fullscreen, but for developing mods it's tremendously useful to have half the screen with a windowed game and the other half my text editor. The half-screen snapping feature in Windows 7+ makes this very easy. I find 21:9 monitors the best of both worlds, effectively dual-display when needed and single-screen when gaming or watching video. I'll never go back to non-ultrawide :)
A while ago I upgraded to three monitors therefore. And this is simply awesome! I can recommend this to all other people who want to increase the experience of a game.
Running on linux you can do everything you want: remove borders of windowed games, position and scale it how you want to - but this needs a lot of power! :D
