Generally speaking, while they may seem obnoxiously spread out, they can still be usable. It just might involve a higher (and, depending on where you are in your game, unsustainable) capital outlay to get things running. If the chains don't seem within reach right now, I'd suggest focusing on passenger transport for the time being. Or, of course, you can always generate a new map!
It's possible to modify a particular game file in a way that you can build industries yourself, wherever you want to (still can't bulldoze industries, though). And while I don't really take positions on how people want to play the game (hey, you do what's fun for you), I think it's more beneficial from a learning perspective to at least start out going "standard" in order to get a handle on how to work with what the game gives you.
