Medium to large map recommendation? (non-Experimental)
I purchased the game yesterday, took a quick look into it (Tutorial and some other stuff), changed some values in the config file (town number, river settings) and tried to get some good looking maps. All of them failed to look nice.

After browsing the workshop I saw that there is a large number of experimental maps, which presumably wouldn't run very well on my system. I rarely found some smaller maps.

Are there any map recommendations for a medium to large map, with or without industry?
The config settings are kind of a closed book to me...

Well, everyone will suggest some different maps...
I'd suggest playing the campaigns first but if you want to jump into free-play right away, I personally think this one might be the best all around that I've played:

It's a large map with 14 towns and should run well on most systems. Someone wrote that experimental map sizes need to be enabled, but I have it on all the time, so not sure about that...
It might not be the most challenging or accurate, but It provides valid options for all transport modes and some nice route-options to start with.

I've downloaded dozens of workshop maps. While some look pretty, they've gotten boring. To me the best ones to play on are the game's own Random maps. They seem to have the right mix of cities & industries, and provide plenty of challenge.

You want the "4K" (standard) size maps (not the "6K") and there's plenty of these standard-size maps in the workshop. One problem is a lot of them have "no industries", so you have to get the "Industry Tycoon" mod which lets you place your own (which is not free and pretty much "cheating"... as in making it too easy on yourself).

Some people like "realistic" maps, some like "fantasy" maps, so I can't recommend specific maps. They're free, so just subscribe to a few and give them a shot. "What's the worse that can happen?"

I tested a few mapsizes and came to the conclusion that a medium 1:2 map with 6 cities and ~30 industries plays best for me. Nice distances, enough towns to have them grow and 2 sets of industries are enough for those cities.

Added the christmas challenge.
Not sure yet if it will go positive by itself in the long run, but maybe that is part of the challenge ;)

Problem with you cahllenges is "The mod selection is my personal initial choice. Some mods (snow) are not necessary and can be disabled. You might also add some if you insist.".

A small update for the christmas one is uploading...
And yes, everyone can cheat etc. Still it's more of a scenario to set the mood. If you want, just take a cookie sit down to watch and relax. Not like you'd have money anyway ;)
