Considering game mechanics: For passenger air travel, people have a choice of just not using them (too expensive), which is why air routes aren't heavily used. Since cargo uses any route you provide, it would always use planes, and you could make a big profit by flying cargo back and forth over the map.
No, but finishd goods are frequently carried by plane, especially in areas without a developed road or rail network. Some other raw materials could be carried by aircraft, too. It's rarely cost-effective if you have an option, but some customers will pay more for faster shipping, or live in areas where it's the least bad option.
Ah. That's a good point, I hadn't considered how this would work mechanically.
