The game absolutely can be played as a single-player and enjoy the experience. If you're playing with someone that's close to you than that would be even better since the PvE can be annoying playing solo but a bit of a fun challenge at the same time. I play the game solo and have been enjoying it by making or advancing my bases into each material based biome. Like you start out basically in the desert and have to run to the edge of a forest and so I sat up a nice camp on a river bank on the opposite side from the forest. After I got myself set up with an alter and small base to store stuff I found out I couldn't progress further without iron which wasn't in the biome that I sat the base up in. I found a good source in the next area for the iron and made a base near there and I've been finding loads of camps and ruins that are worth exploring. This game is super chill if you want it to be. But all that DLC is a scam... Like the next game I'll suggest to you..
If you and your GF haven't played Elder Scrolls Online yet than you most definitely should. Pay the games monthly subscription or buy the expansions as you play through them. ESO is an incredibly in-depth story driven game that will keep 2 people occupied in their own adventures for as long as you want. The game is labeled as PvP but you can easily manage to play the game as a Single-player 'type' of game.
I would very highly suggest Elder Scrolls Online to be quite honest, I don't think you or your lady would regret getting into that game over anything else if you haven't tried it out before. It's a great roleplaying experience =^-^= I have an Orc named Gorgek The Conqueror whose a 2-handed warrior. But the idea is that you just give them a backstory yourself and maybe joke about it with your SO while you 2 create a pair of DnD character to play in a physical game.
TL:DR if you don't like spending money, Get ESO instead of this and download Age of Conan since they tried to use the worst monetization practice for a game. Go on to reddit and look for the best website that'll make ya go "YYARGGHHHHH" like you have an eye patch and a peg leg, if you know what I mean ;o
PS: Conan is like rust with swords. Don't play it if you don't want to be on a cycle of getting your base attacked and then subsequently having to make a new base from scratch. Games like that can be good for humor but if your playing it because you want something new to play. Play something that won't make you start from square-one literally every few days in your real-life

Now to be more serious. Stop trying to kill what some people prefer in a game. I have over a thousand hour playing the game and me and my friends had much more fun in the PVE element until Funcom decided to listen to pvp players and destroy most of the PVE balance with their change of direction.
That killed the game for me and my friends. And from what I saw that did not revitalize the game. It's even having a smaller daily playercount since the novelty of the sorcershit addition did wear off.
Incredibly accurate depiction of PVE servers. Not to mention most of them are full of pornography addicts. You'll find out sooner or later.

While I understand why you don't like that you need to remember that despite the predatory marketing going on here these days pretty much everything behind a pay wall is either cosmetic only or has roughly equivalent items in the main game and they are generally such low level that they don't even matter after you've played for a while.
You only have to buy the base game and you have access to the bulk of game's core non-cosmetic only content. If you buy the Siptah expansion you get full access to the Siptah map. No location on either map is paywalled, none of the game's main "quest" or main content is paywalled. Heck, even some of the FOMO battle pass is free and the rest of it is 100% optional so you don't have to buy it if you don't want to.
Big pile of bovine poo right there. You can ask a player to craft one for you. So much for segregation.
Then buy it or quit whining. Your decision.

I got around 6500 hours on PVE-C no afk, just building and farming.
It has been fun years but the game has changed to the worse lately, it's like theyre adding stuff to late without addressing old bugs, minor bugs. But some major bugs too like all ur thralls suddenly sink into the ground. And you cant get to them.
Dune will be the new CE in a new setting but that can take 2 years to get into.
I have all DLC's but I would only get base game now. For a start.
