Just one proper hall suffices. If you are suffering the way I imagine, give the Unlock+ mod a closer look, which allows you to "pull" items from sources remotely, instead of you having too much micromanagement on hand. Though, I like that micromanagement part, so I have no issue. Just placing the benches in logical order like Tannery next to Tanner's table and so on.

But instead of a shack with a flea market around, for me it just always have to evolve into a fortress or a castle.
I don`t see vanilla getting simplified in the future since it seems like a deliberated decision for cost of materials and thralls.
Even if you could meet all your crafting needs inside a small house, there`s still the size of the purges, that small house still would need some thick walls around to avoid loosing stuff easily, and having a small warband to help you protect is always appreciated, for roleplay reasons where in that small house are they supposed to sleep and make living?

There use to be just a few basic stations.
Armory, Tannery, Blacksmith, Carpenter, Fire-bowl Cauldron and a camp fire. That was IT.
No such things as "improved" or Thrall Dependent Tier junk.
No Industrial sized crap.
No animal taming pens (there wasn't anything tamable either).
Before all this mess came around, crafting was simpler and depended a lot on what you learned ... even if the menus got bloated. They were simpler and easy to navigate.
Dear God, I miss those days.
But I fear what you wish for just plain won't happen since all this evolved out of it.
Worse, we cannot use the very stations we started out with to craft Epics.
At best, if anything was possible: We can pray a mod creator can do it.
When I'm trying to play small, such as in PVP so it's easier to stay hidden, I mostly only have the Furnace, Blacksmith (with crafter in storage until he's needed so he's silent), and Alchemist out, with a small campfire and preservation box. For things like leather and shaped wood, I try to do that processing all at once in bulk rather than leave the carpenter (also too noisy) and tanner out. The Armorer doesn't really need to be out unless you're outfitting an army, which you won't be doing in PVE unless you're expecting a purge, nor in PVP unless you're a big clan that actually has a hope of standing your ground. And the religious altars mostly aren't worth the trouble in PVE. Pets are worthless. Once you have one horse with a couple backups in your refrigerator, the stable can go too.
You don't need all this stuff. And if you really are that needy, then it's only right that you should suffer the consequences of the inconvenience they cause, just like in real life. Figure out what you really need and get rid of the rest, it's a good life skill.
