Personally, I played it by ear. You can change the settings at any point if playing solo, so if I were you I'd start with the default 'easy' mode, and if anything proves annoying or boring, turn the relevant setting down / up in the menu afterwards.
Conan has static difficulty and is meant to be played by small groups, so don't be surprised if you find yourself getting killed a lot at the start, even on "easy" mode - it actually gets easier the longer you play it, but turning down the damage received by you in the beginning can help a lot with surviving combat long enough to learn what works and what doesn't in the first place.
I avoid videos. Make sure you assume many things in any videos more than 3-6 months old have changed.
If going solo/singleplayer, I would try it first with the stock settings and then if you want, you can change stuff.
