In my recent playthrough, I had a glitch where I started cooking food at a campfire and it auto-completed a bunch of meat instantly, so maybe you had the same glitch with that thrall.
ADDENDUM: She also does not appear to be a new thrall, as she is included in a video dating to 2020 that I found on her wiki page.

Purge (rescue) and tavern (hire) can offer thralls that don't have to be broken at the wheel.
After Age of Heroes arrives, random NPC camps will have cages from where you can also rescue thralls.
I've never seen either of theses thralls in the area I captured them in, so I thought it must be something new.
Seems like if they can't be used as Smiths they could call them something else.
I dont know what causes it, but sometimes the wheel sort of has "progress stored" in it, so that when next time you put a thrall in the wheel, the thrall is broken instantly because it used up the stored progress. Its weird, but its a glitch.
